Ingredients

  • 1 cup All-Purpose Flour
  • 5 tablespoons Cocoa Powder
  • 1 tablespoons Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Cinnamon
  • 3/4 cup Buttermilk
  • 1 Egg
  • 1/2 teaspoon Vanilla Extract
  • 1 tablespoon Butter
  • 1 bag Chocolate Chips to serve
  • Whipped Cream or Non Dairy Whipped Topping to serve
  • Maple Syrup to serve

Instructions

  • In a medium bowl, add flour, cocoa powder, sugar, baking powder, baking soda, salt and cinnamon. Mix well with a whisk.
  • Place buttermilk in a separate bowl.
  • Add egg and vanilla. Whisk to combine.
  • Slowly add wet ingredients to the dry, whisking to combine. Continue to whisk until all the dry ingredients are wet, but don’t overmix. (The batter should be a little lumpy.)
  • Place butter into a medium skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), pour about 1/3 cup of batter into the skillet. Cook until little bubbles form all over the surface.
  • Flip and cook until the other side browns too.
  • Repeat with the rest of the batter.
  • Place a pancake on a serving plate. Top with a small handful of chocolate chips.
  • Top with a second pancake.
  • Spoon a dollop of whipped cream onto pancakes.
  • Scatter more chocolate chips over pancakes and onto plate.
  • Serve hot with syrup.
