Ingredients

  • 1 prepared Pizza Crust or Shell store bought or homemade
  • 2 cups shredded Rotisserie Chicken or other Cooked Chicken
  • 1 bottle Thai Peanut Sauce or 2 cups homemade Thai Peanut Sauce of choice
  • 2 cups shredded or sliced Mozzarella Cheese
  • 4 Scallions or Green Onions sliced diagonally
  • 1/2 cup White Bean Sprouts
  • 1/2 cup shredded Carrots
  • 1/4 cup chopped Roasted Peanuts
  • 2 tablespoons chopped fresh Cilantro

Instructions

  • Preheat oven to 450°F (follow instructions on package if using store bought pizza crust or shell)
  • Place chicken in a small bowl. Drizzle with about 1/2 of Thai peanut sauce. Mix. Set aside.
  • Spread a thin layer of peanut sauce over pizza crust or shell.
  • Cover sauce with 1 cup of mozzarella cheese.
  • Distribute the sauced chicken over the cheese.
  • Scatter scallions, bean sprouts and carrots over chicken.
  • Spread remaining 1 cup of cheese over top.
  • Scatter chopped peanuts over top.
  • Place pizza in oven. Bake according to the pizza shell directions or until done, browned on bottom and cheese melted.
  • Remove from oven.
  • Garnish with chopped cilantro.
  • Allow to cool for 5 minutes before slicing.
