- 1/3 cup Butter
- 1 medium Onion peeled and chopped
- One 16-ounce package frozen chopped Broccoli
- Four 15-ounce cans Chicken Broth
- One 1-pound loaf processed Cheese Food Velveeta, cubed
- 8 ounces shredded Cheddar Cheese
- 2 cups Milk
- 1 tablespoon Garlic Powder
- 2/3 cup Cornstarch
- Shredded Cheddar Cheese to serve
- Finely diced Tomatoes to serve
Place a large stock pot or Dutch oven over medium heat. Add butter.
When butter has melted and is hot (do not burn), add onions. Cook until softened.
Add broccoli. Stir to mix.
Add chicken broth. Stir to mix. Simmer until the broccoli is tender.
Reduce heat. Add cheese cubes and cheddar cheese. Stir until melted.
Add milk and garlic powder. Stir to mix.
In a small bowl, stir cornstarch into water until dissolved.
Add mixture into soup. Cook, stirring frequently, until the soup is thick.
Serve hot, sprinkled with cheddar cheese and diced tomatoes.
