Ingredients

  • Red Potatoes enough to make 3 cups after cutting
  • 2 tablespoons chopped Garlic
  • 1 tablespoon chopped Shallots
  • 1 tablespoon fresh Rosemary
  • Extra Virgin Olive Oil to coat
  • Kosher Salt and freshly ground Black Pepper to taste

Instructions

  • Preheat oven to 350°F.
  • Cut potatoes into quarters. Measure out 3 cups.
  • Place cut potatoes in a colander. Rinse under cold water until water runs out clear.
  • In a large bowl, add garlic, shallots, rosemary, olive oil, salt and pepper.
  • Add potatoes to bowl. Toss to coat well.
  • Place potatoes on a sheet pan.
  • Place in preheated oven. Roast for 15 minutes. Toss around a bit. Roast for another 10 minutes. Check to make sure the potatoes are done. Remove from oven when they are.
  • Taste. Add more salt and pepper, to taste, if needed.
