- Red Potatoes enough to make 3 cups after cutting
- 2 tablespoons chopped Garlic
- 1 tablespoon chopped Shallots
- 1 tablespoon fresh Rosemary
- Extra Virgin Olive Oil to coat
- Kosher Salt and freshly ground Black Pepper to taste
Preheat oven to 350°F.
Cut potatoes into quarters. Measure out 3 cups.
Place cut potatoes in a colander. Rinse under cold water until water runs out clear.
In a large bowl, add garlic, shallots, rosemary, olive oil, salt and pepper.
Add potatoes to bowl. Toss to coat well.
Place potatoes on a sheet pan.
Place in preheated oven. Roast for 15 minutes. Toss around a bit. Roast for another 10 minutes. Check to make sure the potatoes are done. Remove from oven when they are.
Taste. Add more salt and pepper, to taste, if needed.
