Ingredients

  • 3 pound Chuck Roast
  • Salt and freshly ground Black Pepper to taste
  • 1/2 teaspoon Garlic Powder
  • 1 cup Flour
  • 2 tablespoons Olive Oil
  • 1 medium Onion diced
  • 1 or 2 cloves Garlic
  • 1 Bay Leaf
  • 1/2 can Beef Broth

Instructions

  • Wash chuck roast. Place on a work surface.
  • Season generously with salt, pepper and garlic powder.
  • Coat with flour, using your hands and turning to fully coat.
  • Pour olive oil into a large skillet. Place over medium heat.
  • When oil is hot and shimmering, place floured roast into hot skillet.
  • Add diced onions around roast.
  • Lightly brown roast on all sides, turning as needed.
  • Transfer roast and onions to greased slow cooker.
  • Toss in whole garlic cloves and bay leaf.
  • Pour in 1/2 can beef broth over roast.
  • Cover and cook on low for 8 to 10 hours until beef is done and tender.
  • Taste broth or a small bit of beef. Add more salt and pepper, to taste, if needed.
  • Serve hot.
