Ingredients

  • 1 pound Bob Evans Original or Italian Sausage Roll
  • One 8-ounce box Manicotti Shells or Jumbo Shells Pasta
  • 1/4 cup chopped Onion
  • 1/4 teaspoon minced Garlic
  • One 10-ounce package frozen chopped Spinach thawed and squeezed dry
  • 1/2 cup grated Parmesan Cheese
  • 1/2 teaspoon dried Oregano
  • One 16-ounce jar Alfredo Sauce or 16 ounces homemade Alfredo Sauce (See Box Below for Links to Recipes), divided
  • One 28-ounce jar Tomato-Based Spaghetti Sauce or 28 ounces Homemade Spaghetti Sauce
  • 1/4 - 1/2 cup Grated Mozzarella Cheese

Instructions

  • Cook manicotti or shells according to package directions. Drain and set aside to cool.
  • Preheat oven to 375°F.
  • Place a medium skillet over medium heat,
  • Add sausage, onion and garlic. Cook until sausage is browned.
  • Stir in spinach, Parmesan cheese, oregano and 1/4 cup Alfredo sauce. Mix well.
  • Remove from heat.
  • Spoon mixture into shells.
  • Pour a small amount of spaghetti sauce on bottom of 9 x 13-inch oven-safe pan or casserole dish. Spread to coat surface evenly.
  • Arrange stuffed shells over sauce in single layer (If using jumbo shells, place them open-side up.
  • Pour remaining Alfredo sauce over shells.
  • Top with remaining spaghetti sauce.
  • Sprinkle with Mozzarella cheese.
  • Place in preheated oven and bake 20 minutes or until heated through and sauce is bubbling. If desired, place under broiler to brown cheese.
  • Serve hot.
