Ingredients

Crumb Topping

  • 5 cups Dark Brown Sugar packed
  • 5 cups All-Purpose Flour
  • 1/2 pound Butter cold, cut into 24 cubes

Apples

  • 3 pounds Granny Smith or other good baking Apples peeled, cored and cut into 1/4-inch wedges
  • 2 cups Dark Brown Sugar packed
  • 1 teaspoon Kosher Salt
  • 1 tablespoon ground Cinnamon
  • 1 teaspoon fresh Nutmeg
  • 1 teaspoon Ginger Powder
  • 1/2 teaspoon ground Cloves
  • 1/2 teaspoon ground Allspice
  • 1 teaspoon Ancho Chile Powder to taste
  • One 7-ounce can Coconut Milk
  • 2 tablespoons Cornstarch

Instructions

Crumb Topping

  • Place 5 cups dark brown sugar and flour in a medium mixing bowl. Whisk to combine.
  • Add butter cubes to bowl. Mix together with your hands until mixture resembles coarse cornmeal. This can be done in advance - Transfer mixture to freezer bags. Squeeze out any air to avoid freezer burn. Place in the freezer for up to three months or until you are ready to use it.

Apples

  • In a medium mixing bowl, add prepared apples, 2 cups dark brown sugar, salt, cinnamon, nutmeg, ginger, cloves, allspice and chile powder. Toss to mix well. Make sure all apples are covered with sugar and spices.
  • Cover bowl and place in refrigerator to chill for at least 4 hours or overnight.

Apple Crisp

  • When ready to cook, preheat the oven to 375°F.
  • Remove apples from refrigerator and use a colander to drain liquid from apples, catching the liquid in another bowl. Reserve the liquid and return apples to original bowl.
  • Add reserved liquid to a small saucepan. Place over medium heat and reduce the liquid by 1/2.
  • Remove the pan from the heat. Stir in the coconut milk. Set aside.
  • Add cornstarch to bowl with apples and toss to mix.
  • Pour apples into a greased 8 × 8-inch casserole dish.
  • Pour apple juice/coconut mixture over the apples.
  • Top evenly with crumb topping. You may not need it all - just cover thickly so that the apples are no longer visible.
  • Place in preheated oven. Bake for 30 minutes.
  • Turn the pan and bake an additional 20 minutes, or until topping is golden brown and apples are tender.
