Ingredients

  • 1 pound Red Ripe Tomatoes
  • 2 large fresh Jalapeños
  • 3 cloves Garlic peeled
  • 1/2 teaspoon Salt
  • 1/2 small White Onion finely chopped
  • 1/3 cup loosely packed chopped Cilantro
  • 1 1/2 teaspoons Cider Vinegar
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Roasted the tomatoes and jalapeños using one of the methods described in the box below or your own best roasting method, reserving juices to add to salsa.
  • Add jalapeños, garlic and 1/4 teaspoon salt to a food processor or blender. Process until you get a coarse paste, stopping to scrape down the sides a couple of times.
  • Add tomatoes. Pulse a few times until you have a coarse-textured purée.
  • Transfer mixture to serving bowl.
  • Stir in any reserved roasting juices.
  • Place chopped onion in a strainer. Rinse under running water. Shake off the excess water. Add rinsed onion to salsa.
  • Add cilantro and vinegar.
  • Stir gently, but thoroughly to mix. Add water, if needed, to give the salsa a thick, but easily spoonable, consistency
  • Taste. Add more salt and pepper, to taste.
