Ingredients

  • 1 Loaf Ciabatta Bread or large Baguette
  • 3/4 cup Butter
  • 4 cloves Garlic minced
  • 2 Green Onions chopped, white and green pieces separated
  • 1 pound large Shrimp uncooked, shelled, deveined and tails removed
  • 2/3 cup White Wine
  • 15 - 20 Black Olives chopped
  • 1 - 2 Roma Tomato seeded and diced finely
  • Grated Parmesan Cheese to dust
  • Fresh Basil torn or chopped into small pieces, to garnish

Instructions

  • Slice into bread into 20 slices, at an angle, about 1/2 inch thick.
  • Using a toaster, toaster oven or oven, toast bread slices slightly. Set aside and keep warm.
  • Place butter in a large skillet.
  • When butter has melted and is hot (do not burn), add garlic. Cook until just starting to get tender, about 2 minutes.
  • Add white parts of onion. Cook until onion and garlic are tender and fragrant, about 5 minutes.
  • Add shrimp. Cook until done.
  • Remove skillet from heat. Spoon shrimp, onions and garlic (leave butter in skillet) out to a bowl and keep warm.
  • Return skillet with butter to heat. Add wine and olives. Cook until lightly boiling, about 2 minutes. Remove from heat.
  • Working quickly, arrange 5 slices of bread on each place in a star (or flower) pattern (See photo above).
  • Place 1 shrimp on each bread. Spoon any remaining shrimp into center of plates.
  • Scatter onions and garlic over bread slices.
  • Spoon butter/wine/olive sauce over shrimp and bread.
  • Spread tomatoes and green parts of onions over bread.
  • Dust lightly with Parmesan cheese, to taste.
  • Garnish with basil.
  • Serve immediately.
