Ingredients

  • 1 recipe Traditional Pizza Dough, store bought or homemade, of choice (See Box Below for Links to Recipes)
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 cups grated Mozzarella Cheese
  • 2 grilled Greek Chicken Breasts, cut into 1/2-inch pieces (See Box Below for this Recipe)
  • 1 large English Cucumber peeled and diced 1/2-inch
  • 2 medium seeded Roma Tomatoes diced 1/2-inch
  • 1 medium Red Onion peeled and chopped
  • 1/2 cup pitted Kalamata Olives drained and cut in 1/2 lengthwise
  • 1 teaspoon freshly squeezed Lemon Juice
  • 1 teaspoon Red Wine Vinegar
  • 1/2 teaspoon Sugar
  • 1/4 teaspoon minced Garlic
  • 1 teaspoon dried Oregano Leaves
  • 1/2 teaspoon Salt to taste
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 1 cup Tzatziki Sauce store bought or homemade, of choice
  • 1/4 cup crumbled Feta Cheese crumbled (about 1/4 cup)
  • 2 teaspoons Flat Leaf Parsley chopped

Instructions

Pizza Dough and Baking

  • Preheat oven at 450°F, for at least 30 minutes.
  • Prepare Traditional Pizza Dough according to the recipe on package, if needed, or using one of the recipes linked to in the Box below.
  • Brush dough with olive oil.
  • Spread evenly with mozzarella cheese, leaving about 1/2 inch uncovered around the outer edge.
  • Scatter prepared chicken over cheese.
  • Place dough in preheated oven and bake for 8 to 10 minutes, until the crust is golden brown and the cheese at the center is melted and bubbly.
  • While dough is cooking, prepare Greek salad.

Greek Salad

  • In a large mixing bowl, combine English cucumber, tomatoes, onion, and olives.
  • In a small bowl, add lemon juice, vinegar, sugar, garlic, oregano, salt and pepper. Whisk to combine and dissolve salt and sugar.
  • Add dressing to salad mixture and toss to mix well. Set aside.

Greek Pizza

  • Slice baked pizza into pieces as desired (before adding cold topping).
  • Spoon Greek salad topping over pizza.
  • Sprinkle with feta cheese.
  • Drizzle with about 1/2 cup Tzatziki Sauce.
  • Sprinkle with parley.
  • Serve immediately with remaining Tzatziki Sauce on the side for dipping.
