Ingredients

  • 2 quarts Water
  • 2 cups Green Split Peas
  • 1 stalk Celery sliced into 1/4-inch slices
  • 1 large Carrot sliced into 1/4-inch slices
  • 1 small Onion chopped roughly
  • 1/4 teaspoon Thyme
  • Pinch Cayenne Pepper
  • 1 Bay Leaf
  • Salt and freshly ground Black Pepper to taste

Instructions

  • In a large soup pot, combine water, peas, celery, carrot, onion, thyme, cayenne and bay leaf.
  • Place over medium high heat and bring to a boil. Boil hard for 20 minutes.
  • Reduce heat to simmer. Simmer for 45 minutes.
  • Taste. Add salt and pepper, to taste. Mix well.
  • Remove from heat and allow to cool.
  • Strain or process in a blender until smooth.
  • Place soup back in pot and heat to serving temperature.
