Ingredients

  • 5 ounces boneless, skinless Chicken Breasts
  • Salt and freshly ground Black Pepper to taste
  • 1 teaspoon Soybean Oil
  • 1/2 teaspoon freshly squeezed Lemon Juice
  • 1/2 teaspoon Sesame Seeds
  • 2 Mushrooms sliced into eight pieces each
  • 1 teaspoon Reduced Sodium Soy Sauce
  • Cooked Rice to serve
  • Scallions cut roughly, to garnish

Instructions

  • Cut chicken breast into bite size pieces. Sprinkle with salt and pepper.
  • Add oil to a nonstick skillet. Place skillet over medium heat.
  • When oil is hot and shimmering, place chicken in hot oil. Cook for about 8 minutes, or until chicken is white in appearance and firm to the touch.
  • Sprinkle chicken breast, still in skillet, with lemon juice and sesame seeds. Stir to combine.
  • Add sliced mushrooms and soy sauce to the skillet along with the soy sauce. Cook for an additional 2 - 3 minutes, stirring occasionally, until the mushrooms are tender and the chicken is fully cooked.
  • Remove the chicken and mushrooms from the skillet and serve hot over rice sprinkled with scallions.
