Ingredients
5ouncesboneless, skinless Chicken Breasts
Salt and freshly ground Black Pepperto taste
1teaspoonSoybean Oil
1/2teaspoonfreshly squeezed Lemon Juice
1/2teaspoonSesame Seeds
2Mushroomssliced into eight pieces each
1teaspoonReduced Sodium Soy Sauce
Cooked Riceto serve
Scallionscut roughly, to garnish
Instructions
Cut chicken breast into bite size pieces. Sprinkle with salt and pepper.
Add oil to a nonstick skillet. Place skillet over medium heat.
When oil is hot and shimmering, place chicken in hot oil. Cook for about 8 minutes, or until chicken is white in appearance and firm to the touch.
Sprinkle chicken breast, still in skillet, with lemon juice and sesame seeds. Stir to combine.
Add sliced mushrooms and soy sauce to the skillet along with the soy sauce. Cook for an additional 2 - 3 minutes, stirring occasionally, until the mushrooms are tender and the chicken is fully cooked.
Remove the chicken and mushrooms from the skillet and serve hot over rice sprinkled with scallions.
