Ingredients

  • One 8-ounce can Guava Paste (see Note Above), cut into 1/2-inch pieces, about 1 cup
  • 1/3 cup Apple Cider Vinegar
  • 1/4 cup Dark Rum
  • 3 tablespoons Tomato Paste
  • 3 tablespoons freshly squeezed Lime Juice
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Worcestershire Sauce
  • 2 teaspoons minced fresh Ginger
  • 1 Scallion white part only, minced
  • 1 clove Garlic minced
  • 1/4 cup Water
  • Salt and freshly ground Black Pepper

Instructions

  • In a small saucepan, combine guava paste, vinegar, rum, tomato paste, lime juice, soy sauce, Worcestershire sauce, ginger, scallion, garlic and water.
  • Place over medium high heat and bring to a boil.
  • Reduce heat to low. Simmer, stirring occasionally, until reduced to 1 1/4 cups, about 15 minutes.
  • Taste. Season with salt and pepper, to taste.
  • Store in a tightly sealed jar or container in the refrigerator for up to 1 month.
