Ingredients

  • 1/4 cup Dry White Wine
  • 1 tablespoon Saffron Threads
  • 2 Egg Yolks at room temperature
  • 1 teaspoon Roasted Garlic
  • 1 tablespoon Sherry Vinegar (use 2 tablespoons for a tarter taste)
  • Salt to taste
  • 1 teaspoon crushed Red Pepper Flakes
  • 1 cup Olive Oil

Instructions

  • Place a small pot over low heat.
  • Add wine and saffron.
  • Bring to a boil. Reduce heat slightly and simmer for 3 minutes or until wine develops a deep saffron color.
  • Remove from heat. Strain and discard saffron. Set wine aside to cool completely.
  • Add egg yolks, garlic, vinegar, salt and red pepper flakes to a blender. Purée for 30 seconds.
  • With blender running, very slowly drizzle in oil. Mix until emulsified.
  • Slowly add saffroned wine and blend thoroughly.
  • Store in a tightly sealed container, in the refrigerator, until ready to serve.
