Ingredients

  • 1 1/2 tablespoons Vegetable Oil
  • 1 cup sliced or large-diced Andouille Sausage
  • 1 cup diced Yellow Onion
  • 1/2 cup seeded and diced Green Pepper
  • 1/2 cup sliced or diced Celery
  • 1 cup diced boneless skinless Chicken Breasts or Thighs
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Cayenne Pepper
  • 1/2 teaspoon freshly ground White Pepper
  • 1 teaspoon freshly ground Black Pepper
  • 1/4 teaspoon Thyme
  • 1/4 tablespoon Tabasco Hot Sauce
  • 1/4 cup puréed Garlic
  • 2 tablespoons Chicken Base
  • 1/2 cup canned diced Tomatoes liquid removed well
  • 2 cups White Rice

Instructions

  • Preheat oven to 350°F.
  • Place a large pot or kettle over medium heat.
  • Add oil.
  • When oil is hot and shimmering, add sausage. Sauté until crisp.
  • Add onions, green pepper and celery. Sauté until tender. Mix well.
  • Add in chicken. Sauté until about 2 minutes.
  • Add salt, cayenne, white and black pepper, thyme, Tabasco, garlic puree and chicken base. Mix well. Cook, stirring, for 3 to 5 minutes.
  • Add diced tomatoes. Mix well. Cook, stirring, for 4 minutes.
  • Add white rice. Mix very well. Cook for 2 minutes.
  • Remove from heat.
  • Turn mixture out into a large cooking dish or rectangular baking pan (9 by 13-inch). Cover pan with foil.
  • Place pan in preheated oven and cook for 20 to 30 minutes, until rice is tender.
  • Remove from oven and serve warm.
