Ingredients
1poundcooked Lobster Meat (or Meat from one 5 pound fully-cooked Maine Lobster)
4New England-Style Split-Top Hot Dog Buns or Hoagie Buns
2tablespoonsSalted Butter
2teaspoonsor more Mayonnaise
1/2teaspoonfreshly squeezed Lemon Juice
Saltto taste
4pinchesLuke's Seasoning (Alternately, 1/4 teaspoon Celery Salt, 1/4 teaspoon Oregano and 1/4 teaspoon freshly ground Black Pepper, mixed well)
Instructions
Place a small saucepan over low heat. Add butter.
When butter has melted and is hot, remove from the heat. Brush 1/2 teaspoon of melted butter onto the outer sides of your buns. Set aside the remaining butter for later use.
Place small pan over medium-low heat. Heat for 1 minute. Place buns in the pan and toast until golden brown, about 1 to 2 minutes per side. Remove the buns from the pan and place on a plate.
Spread 1/2 teaspoon of the mayonnaise on the inside of each bun.
Fill each bun with 1/4 pound of the chunks of lobster meat.
Reheat the remaining melted butter, if necessary. Add the lemon juice. Mix. Drizzle the warm lemon butter evenly over the lobster in each roll.
Evenly sprinkle one pinch of Luke's Seasoning or prepared celery salt/oregano/pepper mixture on top of each sandwich.
Serve immediately with a pickle or side of potato chips.
