Ingredients
One 16-ounce can Plum Tomatoes
drained and diced
1/4
cup
freshly squeezed Orange Juice
1
tablespoons
chopped Shallot
1/2
tablespoons
Salt
1/4
tablespoons
freshly ground Black Pepper
to taste
Instructions
Preheat oven to 350°F.
In a medium bowl, combine tomatoes, orange juice, shallot, salt and pepper.
Spread on a shallow baking pan.
Place in preheated oven and bake 20 - 30 minutes until most of the juices are evaporated and tomatoes are caramelized.
Scrape from pan and place in a bowl. Set aside.
