Ingredients

  • 2 tablespoons Butter
  • 8 slices Rye Bread
  • 1/2 cup Thousand Island Salad Dressing
  • 8 slices Swiss Cheese
  • 8 - 16 thin slices Corned Beef (or more, if you like. Alton prefers more. But, you probably already knew that.)
  • 1 cup Sauerkraut drained
  • 8 - 16 or more Pickle Slices Dill, Sweet, Bread and Butter or other, your choice

Instructions

  • Place a large skillet over medium heat or heat a griddle to medium heat.
  • Lightly butter one side of all bread slices.
  • Place 4 bread slices on a work surface, buttered side down.
  • Slather all 4 slices with Thousand Island dressing.
  • Layer all 4 slices, in this order, with 1 slice Swiss cheese, 2 - 4 slices corned beef, 1/4 cup sauerkraut, 2 - 4 or more pickle slices and another slice of Swiss cheese.
  • Spread non-buttered sides of remaining 4 bread slices with Thousand Island dressing.
  • Top built sandwiches with remaining bread slices, buttered sides out.
  • Place sandwiches in skillet or on griddle and cook until both sides are golden brown, about 5 - 10 minutes per side.
  • Remove for skillet or griddle and cut in 1/2 diagonally.
  • Serve hot.
