stick Butter

finely chopped Yellow Onions

finely chopped Garlic

freshly squeezed Lemon Juice

Dry White Wine
Salt and freshly ground Black Pepper
to taste

cold Butter
Instructions
Place butter in a small skillet. Place over low heat and melt.
When melted, remove from heat and set aside for several minutes to allow the milk solids to settle to the bottom.
Skim the clear (clarified) butter from the top. Discard sediment.
Place 2 tablespoons prepared clarified butter in a medium skillet. Heat until hot and shimmering.
Add onion and garlic. Sauté until transparent and tender.
Add lemon juice and white wine.
Season to taste with salt and pepper.
Simmer, stirring, for 2 - 3 minutes to reduce liquid.
Remove from heat and swirl in cold butter until sauce is smooth and emulsified.
