Carrabba's Italian Grill Lemon Butter Sauce Recipe

Ingredients

  • 1/2 stick Butter
  • 2 tablespoons finely chopped Yellow Onions
  • 2 tablespoons finely chopped Garlic
  • 4 tablespoons freshly squeezed Lemon Juice
  • 2 tablespoons Dry White Wine
  • Salt and freshly ground Black Pepper to taste
  • 2 tablespoons cold Butter

Instructions

  • Place butter in a small skillet. Place over low heat and melt.
  • When melted, remove from heat and set aside for several minutes to allow the milk solids to settle to the bottom.
  • Skim the clear (clarified) butter from the top. Discard sediment.
  • Place 2 tablespoons prepared clarified butter in a medium skillet. Heat until hot and shimmering.
  • Add onion and garlic. Sauté until transparent and tender.
  • Add lemon juice and white wine.
  • Season to taste with salt and pepper.
  • Simmer, stirring, for 2 - 3 minutes to reduce liquid.
  • Remove from heat and swirl in cold butter until sauce is smooth and emulsified.
