Panera Bread Quick Hollandaise Sauce Recipe

Ingredients

  • 2 Egg Yolks
  • 2 tablespoons boiling Water
  • 1 cup 2 sticks Butter, melted and hot
  • 2 tablespoons freshly squeezed Lemon Juice
  • Salt and freshly ground Black Pepper to taste
  • 1 teaspoon minced Parsley, 1 teaspoon minced Thyme or 1 teaspoon minced Basil, of choice

Instructions

  • Place egg yolks in the blender. Blend at low speed until thoroughly mixed.
  • While the motor is running, slowly add boiling water.
  • Slowly add hot butter. Butter should be added very slowly in the thinnest stream possible.
  • When butter is completely incorporated, add lemon juice, salt and herbs.
  • If the sauce is too thick, add a few drops of boiling water.
