Ingredients

  • Four 7-ounce center-cut Salmon Fillets patted dry with paper towels
  • Fine Sea Salt and freshly ground Black Pepper to season, to taste
  • 2 cups White Breadcrumbs, from a Sourdough or French Loaf
  • 2 tablespoons prepared Horseradish
  • 1/4 cup unsalted Butter melted
  • 1 teaspoon chopped Dill
  • 4 Lemon Wedges for serving
  • 2 teaspoons finely chopped Flat-Leaf Parsley for garnish

Instructions

  • Preheat a broiler to high heat.
  • Sprinkle salt and pepper over both sides of all salmon fillets.
  • Place fillets in a roasting pan or on a baking sheet.
  • In a small bowl, add breadcrumbs, horseradish, melted butter, dill, and 1/4 teaspoon freshly ground black pepper. Mix thoroughly with a fork. The mixture should be moist but not gummy.
  • Using your hand (wear a rubber kitchen glove, if you like) carefully pat breadcrumb mixture onto each filet until you create a 1/4-inch crust.
  • Place fillets into broiler. Broil until golden brown, about 3 to 5 minutes. Do not over-cook.
  • Remove pan from oven and set aside briefly.
  • Turn off the broiler and set the oven to 400°F.
  • When oven reaches temperature, place pan back in oven and cook the salmon for 6 to 8 minutes, until firm and opaque at the center. Do not over-cook.
  • Transfer salmon to serving plates.'
  • Place a lemon wedge on the side. Sprinkle chopped parsley lightly over the entire plate.
  • Serve at once.
