Ingredients
1poundVelveetacut into 1/4-inch cubes
1/2cupWhole Milk
1tablespoonButter
2tablespoonsdiced Poblano Peppersseeded
2tablespoonsdiced Jalapeños (Or more if more heat is desired) seeded and deveined
2tablespoonsdiced Onions
2tablespoonsdiced Red Bell Peppers
Instructions
Place Velveeta and milk into a double boiler. Place over medium heat and melt cheese, stirring occasionally. (Alternately, place in a microwave proof bowl and microwave for approximately 45 seconds, stirring once.)
Place butter in a sauté pan. Place over medium heat and melt. Do not burn.
Add poblano peppers, jalapeños, onions and bell peppers. Cook until tender, being careful not to burn.
Pour melted cheese mixture into a large bowl.
Add vegetable mixture to bowl and, using a plastic spatula, fold together.
