Corn Oil or Vegetable Oil

Onion
diced

Celery ribs
peeled and diced

Potatoes
peeled and diced

chopped Parsley
2
teaspoons
chopped fresh Savory or 1 teaspoon dried (optional)

Flour

cup
Milk
2
cups
Chicken Broth
2
cups
diced cooked Chicken
1
cup
fresh, canned or frozen (thawed) Corn Kernels
Salt and freshly ground Black Pepper
to taste
Instructions
Pour oil in a large pot. Place over medium heat.
When oil is hot and shimmering, add onion and celery. Sauté for about 5 minutes.
Reduce heat to low.
Add potatoes. Cover and cook for about 10 minutes, stirring occasionally.
Stir in parsley and savory.
In a small bowl, combine flour and milk, Stir to make a thin paste. Add to pot. Stir to combine.
Add broth, chicken and corn. Stir to combine.
Cook gently 5 minutes.
Taste. Add salt and pepper, to taste.
Cook gently another 5 minutes.
Serve hot.
