Ingredients

  • 4 tablespoons Corn Oil or Vegetable Oil
  • 1 Onion diced
  • 2 - 3 Celery ribs peeled and diced
  • 2 - 3 Potatoes peeled and diced
  • 2 tablespoons chopped Parsley
  • 2 teaspoons chopped fresh Savory or 1 teaspoon dried (optional)
  • 2 tablespoons Flour
  • 1 cup Milk
  • 2 cups Chicken Broth
  • 2 cups diced cooked Chicken
  • 1 cup fresh, canned or frozen (thawed) Corn Kernels
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Pour oil in a large pot. Place over medium heat.
  • When oil is hot and shimmering, add onion and celery. Sauté for about 5 minutes.
  • Reduce heat to low.
  • Add potatoes. Cover and cook for about 10 minutes, stirring occasionally.
  • Stir in parsley and savory.
  • In a small bowl, combine flour and milk, Stir to make a thin paste. Add to pot. Stir to combine.
  • Add broth, chicken and corn. Stir to combine.
  • Cook gently 5 minutes.
  • Taste. Add salt and pepper, to taste.
  • Cook gently another 5 minutes.
  • Serve hot.
