Carefully slice croissants in half.
Spread each half with mayonnaise.
Place bottom halves on serving plates.
On each bottom half, place 2 leaves lettuce, 2 slices tomato, 1/2 of turkey slices and 2 slices crispy bacon.
Prepare avocado as close to serving time as you can by starting at the top, with a very sharp knife, cut down into avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
Pull the two halves of the avocado apart and remove the pit with a spoon.
Use the spoon to scoop the avocado out of the skin. Slice thin.
Place 1/2 of the avocado slices on each sandwich.
Add top half of croissant and cut in half crosswise.
Serve with steak fries as Red Robin does.
