Ingredients

  • 1 ounces Extra Virgin Olive Oil
  • 1 teaspoon chopped Garlic
  • 15 pieces Prince Edward Island Mussels cleaned
  • 8 ounces White Wine
  • 3 ounces White Cannellini Beans
  • 1 ounces Sun-Dried Tomatoes chopped
  • 1 tablespoon fresh Basil chopped
  • 1 tablespoon fresh Parsley chopped
  • 1 tablespoon Butter
  • Salt and freshly ground Black Pepper to taste
  • Half-slices Bread, lightly toasted in Garlic Oil for garnish

Instructions

  • Place olive oil in a sauté pan. Place pan over medium heat.
  • When oil is hot, add garlic. Cook for 30 seconds, until lightly toasted
  • Add cleaned mussels. Cook for another 30 seconds.
  • Add white wine. Steam until mussels open in covered sauté pan on medium heat.
  • Add beans, tomatoes, basil and parsley. Cook for 1 minute on low heat. Add butter, salt and pepper. Cook until butter is melted.
  • Remove from heat.
  • Using tongs, place mussels in a shallow dish so that mussels face upward.
  • Pour cooking sauce over the top.
  • Garnish with garlic toast.
  • Serve immediately, hot.
  • You may want a little toasted baguette to enjoy the rest of the sauce you created.
