- 1 prepared Pizza Dough store bought or homemade
- Semolina, Cornmeal or Whole Wheat Flour for the pizza peel
- Extra Virgin Olive Oil for brushing
- 5 ounces fresh Whole Milk Mozzarella Cheese thinly sliced and cut into 2-inch pieces
- 2 ripe Plum or Roma Tomatoes cut lengthwise into 1/4-inch slices
- 8 to 10 fresh Basil Leaves torn or coarsely chopped
- Freshly ground Black Pepper to taste
Position a rack in the bottom third of your oven.
Place a pizza stone (if you are using one) on the rack.
Preheat oven to 550°F or your hottest setting. Allow at least 30 minutes preheating time to reach optimal temperature.
Evenly sprinkle a pizza peel with flour.
Working on the floured pizza peel, shape dough into a 12-inch round.
Brush dough with olive oil.
Arrange mozzarella pieces and tomato slices evenly over the dough, leaving a 1-inch border around the perimeter
Carefully slide pizza off peel onto the hot stone. Close the door immediately.
Bake until crust and underside are browned (use the peel to lift the pizza and check), about 8 to 10 minutes.
Use the peel to remove pizza from the oven. Transfer to a carving board.
Sprinkle with basil.
Let stand about 3 minutes
Season with the pepper, to taste.
Cut pizza into wedges.
Serve hot.
