Ingredients

  • Wagamama Chicken Marinade (Recipe Below)
  • 2 boneless, skinless Chicken Thighs
  • 10 1/2 ounces Short Grain Rice
  • 2 tablespoons Teriyaki Sauce to taste
  • Handful of fresh Pea Shoots
  • 1/2 Carrot grated or julienne
  • 1 Scallion chopped
  • 1 1/2 ounce Kimchee of choice, store bought or homemade, to serve
  • Sesame Seeds to garnish

Instructions

  • Make Wagamama Chicken Marinade according to the recipe below at least 1 hour before cooking.
  • Place chicken thighs in a shallow bowl.
  • Pour prepared Wagamama Chicken Marinade over thighs. Turn to coat well. Set aside to marinate for 1 hour. If marinating longer, cover bowl and place in refrigerator.
  • Preheat oven to 350°F.
  • Remove chicken from marinade. Discard marinade.
  • Place chicken on a sprayed cooking sheet and place in preheated oven. Cook until cook though and internal temperature reaches at least 165°F.
  • Prepare rice according to the directions on the packaging or your own recipe while chicken is cooking.
  • Remove cooked thighs from the oven and place on a cutting board or work surface. Slice into thin strips.
  • Add prepared rice to 1 large or 2 smaller bowls.
  • Place sliced chicken strips gently on top.
  • Drizzle teriyaki sauce over the chicken.
  • Add fresh pea shoots, carrot and scallions to dish
  • Sprinkle with sesame seeds.
  • Serve immediately, with kimchee on the side.
