Ingredients

  • 2 cups Creamy Mashed Potatoes
  • 1/2 cup soft Bread Crumbs
  • 1 tablespoon finely chopped fresh Dill
  • 1 teaspoon finely chopped fresh Thyme
  • 2 Eggs beaten
  • Salt and freshly ground Black Pepper to taste
  • 2 - 3 tablespoons Butter

Instructions

  • Add mashed potatoes, bread crumbs, dill, thyme and beaten eggs to a medium mixing bowl.
  • Add a little salt and pepper, to taste. Mix well.
  • Place butter in a large skillet.
  • Heat skillet over medium low heat until butter has melted and gets hot. Do not burn.
  • Drop in large spoonful of the potato mixture. Flatten them with a spatula. Repeat with more spoonfuls until skillet is full but not crowded.
  • Cook over a gentle heat until the undersides of the cakes are light brown. Turn over with a spatula and brown the other side.
  • Remove to a paper towel-covered plate to drain. Repeat with remaining mixture.
  • Serve hot.
