Ingredients

Crust

  • 1/4 cup Butter
  • 2 1/2 cups Oreo Cookie Crumbs or other Chocolate Cookie Crumbs of choice

Filling

  • 2 1/2 pounds Cream Cheese softened
  • 1 1/2 cups Sugar
  • 1 cup Heavy Cream
  • 1 tablespoons Vanilla
  • 2 cups slightly crushed Oreos
  • 5 whole Eggs

Butterscotch Mango Sauce

  • 2 cups Mango Chunks
  • 1/2 cup Sugar
  • 1/2 cup Butterscotch Sauce
  • 1 teaspoon Vanilla
  • 1 Almond Extract
  • 2 ounces Butter

Instructions

Crust

  • Melt butter.
  • Place Oreo cookie crumbs in a large bowl. Pour in melted butter. Mix well.
  • Mold mixture into a baking tin to form bottom and wall crust. Set aside.

Filling

  • Preheat oven to 325°F.
  • In a food processor, blend cream cheese and sugar.
  • Add heavy cream and vanilla. Mix until blended.
  • Add eggs, one at a time, while processor is still running.
  • Pour mixture out into a large bowl.
  • Add crushed Oreo cookies to cheesecake batter and mix to distribute evenly throughout batter.
  • Pour into prepared crust.
  • Place in preheated oven. Bake 1 1/4 hours.
  • Remove from oven and cool completely.

Butterscotch Mango Sauce

  • In a saucepan combine all ingredients. Place on the stovetop over low heat and reduce for 3 to 4 minutes. Do not overcook - so that mango remains in chunks.
  • Remove from heat and set aside to cool.
  • When sauce is cool, pour on top of cheesecake and slice to serve.
