Prepare pasta according to instructions on the box. Drain. Place in a large bowl. Set aside and keep warm.
Prepare chicken according to package instructions. Cut into smaller pieces, if desired. Set aside and keep warm.
Add butter to a large skillet. Place over medium heat and melt butter.
Add garlic and saute 2 - 3 minutes.
Add chopped red pepper. Cook several minutes, until pepper is tender-crisp. Remove pepper from pan to a small bowl. Do not clean pan. Return pan to heat.
Pour wine into pan. Cook, whisking, for about a minute.
Add half & half. Continue to whisk and cook for another minute.
Add Parmesan and Asiago cheeses. Turn heat down to simmer, stirring to let the cheese melt.
Add prepared red pepper back into the sauce. Stir to mix.
Pour sauce over pasta. Toss to coat and mix.
Top with cooked chicken pieces.
Sprinkle on sun-dried tomatoes and smoked Mozzarella.
Garnish with parsley.
Serve hot.
