Ingredients

  • 1 box Penne Pasta
  • 1 1/2 pounds frozen Breaded Chicken Tenders or Fingers
  • 3 tablespoons Butter
  • 1 clove Garlic crushed
  • 1 Red Bell Pepper cored seeded and chopped
  • 1/2 cup White Wine
  • 1 1/2 cups Half & Half warmed
  • 3/4 cup grated Parmesan Cheese
  • 3/4 cup grated Asiago Cheese
  • 1/2 cup Sun-Dried Tomatoes chopped
  • 1/2 cup shredded Smoked Mozzarella Cheese
  • Salt and freshly ground Black Pepper to taste
  • Parsley chopped, for garnish

Instructions

  • Prepare pasta according to instructions on the box. Drain. Place in a large bowl. Set aside and keep warm.
  • Prepare chicken according to package instructions. Cut into smaller pieces, if desired. Set aside and keep warm.
  • Add butter to a large skillet. Place over medium heat and melt butter.
  • Add garlic and saute 2 - 3 minutes.
  • Add chopped red pepper. Cook several minutes, until pepper is tender-crisp. Remove pepper from pan to a small bowl. Do not clean pan. Return pan to heat.
  • Pour wine into pan. Cook, whisking, for about a minute.
  • Add half & half. Continue to whisk and cook for another minute.
  • Add Parmesan and Asiago cheeses. Turn heat down to simmer, stirring to let the cheese melt.
  • Add prepared red pepper back into the sauce. Stir to mix.
  • Pour sauce over pasta. Toss to coat and mix.
  • Top with cooked chicken pieces.
  • Sprinkle on sun-dried tomatoes and smoked Mozzarella.
  • Garnish with parsley.
  • Serve hot.
