- 2 cold Baked Potatoes
- 1/4 cup Cooking Oil
- 1/2 cup Hickory-Smoked Bacon cooked about 1/2 done and cut into small pieces
- 1/4 - 1/2 cup Monterey Jack Cheese shredded
- 1/4 - 1/2 cup Sharp Cheddar Cheese shredded
- 2 teaspoons Lawry's Seasoned Salt
- Sour Cream to serve
- 2 Green Onions chopped, to garnish
Leaving the skin on, dice the potatoes into small cubes.
Pour oil into a large frying pan that has a fitting lid. Place over medium heat.
When oil is hot and shimmering, add potatoes. Season with seasoning salt. Cook, stirring for 1 - 2 minutes to slightly brown potatoes.
Add prepared bacon piece. Stir to mix.
Sprinkle Monterey Jack and Sharp Cheddar cheeses over top.
Cover with lid. Simmer for 6 - 8 minutes, until the potatoes are warm and cheese has melted.
Transfer contents to 2 serving plates. Top with a dollop of sour cream. Scatter a bit of green onion over.
Add 2 IHOP Buttermilk Pancakes and serve hot.
