Cook rice noodles according to packet instructions. Drain.
Place a large frying pan over medium heat.
Add vegetable oil.
When oil is hot and shimmering, carefully place leek, onion, beansprouts, ginger, garlic and tofu into frying pan. Toss and cook until fragrant.
Add whisked egg and drained cooked noodles. Toss ingredients well to cook quickly.
Add amai sauce, to taste. Cook until warmed through.
Place on a plate.
Garnish with red chile, peanuts, mint, cilantro, chili flakes and lime.
Serve hot.
