Ingredients

  • 2 pounds Potatoes peeled and quartered
  • 2 ounces Butter unsalted, at room temperature
  • 1/3 cup Heavy Cream
  • 1/4 cup Sour Cream
  • 1/2 cup grated Sharp or Mild Cheddar Cheese
  • 1 teaspoon Salt
  • 1/2 teaspoon White Pepper

Instructions

  • Place potatoes in a large cooking pot. Add cold water to cover.
  • Place on stovetop over medium heat. Bring to a boil.
  • Reduce heat slightly and simmer until fork tender. Drain completely.
  • Place potatoes in a large mixing bowl. Mix with an electric mixer until smooth.
  • When smooth, add butter. Blend well.
  • Add cream, a little at a time. Beat well with each addition.
  • Add sour cream and blend.
  • Add cheese, salt and pepper. Blend to mix.
  • Taste. Add more salt and pepper, to taste, if needed.
  • Reheat potatoes on the stovetop or in the microwave, if they have cooled during preparation.
  • Serve hot.
