- 2 pounds Potatoes peeled and quartered
- 2 ounces Butter unsalted, at room temperature
- 1/3 cup Heavy Cream
- 1/4 cup Sour Cream
- 1/2 cup grated Sharp or Mild Cheddar Cheese
- 1 teaspoon Salt
- 1/2 teaspoon White Pepper
Place potatoes in a large cooking pot. Add cold water to cover.
Place on stovetop over medium heat. Bring to a boil.
Reduce heat slightly and simmer until fork tender. Drain completely.
Place potatoes in a large mixing bowl. Mix with an electric mixer until smooth.
When smooth, add butter. Blend well.
Add cream, a little at a time. Beat well with each addition.
Add sour cream and blend.
Add cheese, salt and pepper. Blend to mix.
Taste. Add more salt and pepper, to taste, if needed.
Reheat potatoes on the stovetop or in the microwave, if they have cooled during preparation.
Serve hot.
