Ingredients

Basil Lemon Butter Sauce

  • 8 tablespoons Butter divided
  • 8 teaspoons chopped Onions
  • 8 teaspoons chopped Garlic
  • 1 cup Pinot Grigio White Wine
  • 1/2 - 1 cup freshly squeezed Lemon Juice
  • 20 pieces Sun-Dried Tomatoes
  • 3 - 4 tablespoons freshly chopped Basil

Chicken

  • 2 boneless skinless Chicken Breasts
  • Extra Virgin Olive Oil as needed
  • Italian Seasoning to taste
  • Salt and freshly ground Black Pepper to taste
  • 4 ounces Goat Cheese

Instructions

  • Preheat oven to 350°F.

Basil Lemon Butter Sauce

  • Heat 2 tablespoons butter in a medium pan.
  • When hot, add onions. Sauté until onions are beginning to get soft.
  • Add garlic and continue to sauté until onions are soft.
  • Add in white wine and 1/2 cup lemon juice.
  • Simmer, on medium low heat, for 10 minutes to reduce.
  • Add 6 tablespoons butter, a tablespoon at a time, stirring and melting each, until the mixture emulsifies.
  • Add tomatoes and basil.
  • Increase heat to medium and heat until just hot. Do do overcook or sauce will break.
  • Taste. Add additional lemon juice, if necessary.

Chicken

  • Coat chicken on both sides with oil.
  • Season both sides with, Italian seasoning, salt and pepper, to taste.
  • Place chicken in preheated oven. Bake until cooked to a minimum internal temperature of 165°F.
  • Remove chicken from oven.
  • Turn oven to low.
  • Place 1/2 of cheese on each chicken breast.
  • Return to warm oven and allow cheese to melt a bit.
  • When cheese has melted a little, place one chicken breast on a hot plate.
  • Spoon sauce over.
  • Repeat with other breast.
  • Serve hot.
