Basil Lemon Butter Sauce
- 8 tablespoons Butter divided
- 8 teaspoons chopped Onions
- 8 teaspoons chopped Garlic
- 1 cup Pinot Grigio White Wine
- 1/2 - 1 cup freshly squeezed Lemon Juice
- 20 pieces Sun-Dried Tomatoes
- 3 - 4 tablespoons freshly chopped Basil
Chicken
- 2 boneless skinless Chicken Breasts
- Extra Virgin Olive Oil as needed
- Italian Seasoning to taste
- Salt and freshly ground Black Pepper to taste
- 4 ounces Goat Cheese
Basil Lemon Butter Sauce
Heat 2 tablespoons butter in a medium pan.
When hot, add onions. Sauté until onions are beginning to get soft.
Add garlic and continue to sauté until onions are soft.
Add in white wine and 1/2 cup lemon juice.
Simmer, on medium low heat, for 10 minutes to reduce.
Add 6 tablespoons butter, a tablespoon at a time, stirring and melting each, until the mixture emulsifies.
Add tomatoes and basil.
Increase heat to medium and heat until just hot. Do do overcook or sauce will break.
Taste. Add additional lemon juice, if necessary.
Chicken
Coat chicken on both sides with oil.
Season both sides with, Italian seasoning, salt and pepper, to taste.
Place chicken in preheated oven. Bake until cooked to a minimum internal temperature of 165°F.
Remove chicken from oven.
Turn oven to low.
Place 1/2 of cheese on each chicken breast.
Return to warm oven and allow cheese to melt a bit.
When cheese has melted a little, place one chicken breast on a hot plate.
Spoon sauce over.
Repeat with other breast.
Serve hot.
