Ingredients

Ribs

  • 1 - 3 Racks Ribs of choice
  • Gordon Biersch Märzen Beer or other Märzen Beer of choice
  • Water

Sauce (Enough for 3 Racks of Ribs)

  • 1/4 cup Olive Oil
  • 1 large Onion finely chopped
  • 1/4 cup finely chopped Garlic
  • 1 bottle Gordon Biersch Märzen or other Märzen Beer of choice
  • 1 quart of your Favorite BBQ Sauce, store bought (Cattleman's preferred by Gordon Biersch) or homemade
  • 1/4 cup Molasses
  • 1/4 cup canned puréed Chipotle Chilies

Instructions

Sauce

  • Pour olive oil into a large sauté pan. Place pan over medium heat.
  • When oil is hot and shimmering, add onions and garlic. Sauté until translucent. Deglaze pan with the Gordon Biersch Märzen (Pour the beer into the pan. Using a spoon or plastic spatula, scrape the browned bits of onion and garlic off the bottom).
  • Add BBQ sauce, molasses and chipotle chilies. Reduce heat. Allow to simmer for 1 hour. Adjust heat as necessary to keep a low simmer.
  • When done, remove from heat.

Ribs

  • Place ribs in a large pot.
  • Cover with 50/50 mixture of Gordon Biersch Märzen and water.
  • Place over medium high heat and gradually bring to a low boil. Reduce or increase heat as necessary. Let the ribs simmer for 30 minutes.
  • Turn off the heat and let the ribs cool to luke warm temperature.
  • Remove ribs to a bowl or dish large enough to hold them comfortably for marinating.
  • Pour enough prepared sauce over ribs to cover completely. Turn ribs to make sure are surfaces are covered.
  • Place, covered in the refrigerator and marinate blanched ribs in the BBQ sauce for a minimum of 1 hour, maximum of overnight.
  • When ready to cook, build a fire in your grill.
  • Grill over high flame until the sauce has caramelized on the outside of the ribs and continue to brush the remaining sauce on the ribs while grilling.
  • Serve hot.
