Ingredients

  • 3/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter softened
  • 2 large Eggs
  • 1/4 teaspoon Almond Extract
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Cinnamon
  • 2 1/2 cups All Purpose Flour
  • 1 cup Almonds sliced

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, add sugar and butter. Beat until fully mixed.
  • Gradually add in eggs, one at a time, beating well.
  • Add almond extract, baking powder, salt and cinnamon. Beat until just blended.
  • Slowly add flour, blending on low speed.
  • Stir in the almonds. Mix for 30 seconds.
  • Form the dough into a 12 x 3 inch log on a parchment paper lined baking sheet.
  • Place in preheated oven. Bake until lightly golden, about 40 minutes.
  • Remove from oven and allow to cool for 30 minutes.
  • Cut diagonally into 3/4-inch slices. Reduce oven to 350°F.
  • Arrange slices cut side down on cooking sheet. Bake 15 to 20 minutes until golden brown.
  • Transfer from the baking sheet to plate and allow to cool for about 1 hour.
  • Serve at room temperature.
