Arrange the sausages in a baking dish or pan.
In a medium bowl, add beer, onion, cilantro and salt and pepper. Mix.
Pour mixture over the sausages.
Cover and place in the refrigerator overnight to marinate.
Place a large Dutch oven or heavy pot over medium-high heat.
Add olive oil and marinated sausages.
Cook until browned on all sides, about 8 minutes.
Pour in marinating mixture.
Bring mixture to a boil (increase heat, if necessary), then reduce heat and continue to cook, at a low simmer, until onions are soft and translucent, about 7 - 10 minutes. Add water or more beer if mixture starts to get too dry.
Check to make sure sausages are done and internal temperature has reached at least 165°F.
Arrange sausages on a serving place.
Pour cooking liquid over sausages.
