Ingredients

  • 1 Carrot sliced
  • 1 Red Bell Pepper cored and sliced into strips
  • 1 Green Bell Pepper cored and sliced into strips
  • 1 Zucchini sliced
  • 2 New Potatoes
  • 2 tablespoon Oil
  • Salt and freshly ground Black Pepper to taste
  • Blackened Seasoning (Recipe below)
  • 5 ounces Salmon
  • Sprig of Rosemary to garnish

Instructions

  • Prepare Blackened Seasoning according to recipe below. Set aside.
  • Preheat oven to 325°F.
  • Place prepared carrot, red pepper, green pepper, zucchini and potatoes in a large mixing bowl.
  • Add oil and salt and pepper, to taste. Toss to coat.
  • Place vegetables on a foil covered baking sheet.
  • Place in preheated oven. Roast vegetables for 20 minutes or until fork tender.
  • While vegetables are cooking, rub salmon filet with blackened seasoning on all sides.
  • Place a skillet over high heat.
  • Place salmon in skillet very hot skillet and seer, turning once, until it reaches 145°F.
  • Remove from heat.
  • Arrange cooked vegetables on plate with salmon on the side.
  • Garnish with rosemary.
