  • One 10-ounce can Black Beans drained and rinsed
  • One 10-ounce can Corn Kernels drained
  • 4 tablespoons Red Onions diced 1/4-inch
  • 4 tablespoons Red Bell Peppers diced 1/4-inch
  • 4 tablespoons Green Bell Peppers diced 1/4-inch
  • 2 tablespoons Cilantro chopped
  • 4 tablespoons Extra Virgin Olive Oil
  • Salt and freshly ground Black Pepper to taste

Instructions

  • Add all ingredients, except salt and pepper, to a large bowl. Mix well with a rubber spatula.
  • Add salt and pepper, to taste.
  • Taste. Add more salt and pepper, if needed.
  • Store, covered, in the refrigerator, until ready to serve.
  • Serve chilled.
