- 2 Egg Whites
- 1 1/2 cups Panko or Breadcrumbs
- 1/2 teaspoon Cumin
- 3/4 cup Flaked Coconut
- 1 clove Garlic minced
- Freshly ground Black Pepper to taste
- 24 large Shrimp peeled, deveined and butterflied
Preheat oven to 400°F. Spray a baking sheet with olive oil spray. Place egg whites in a small bowl. Beat with a whisk until slightly frothy.
In another small bowl, use a whisk to mix panko, cumin, coconut, garlic and pepper, to taste.
Dip a shrimp in egg whites. Turn to coat fully.
Place shrimp in coconut mixture and toss to coat well and evenly.
Lay shrimp on baking sheet.
Repeat with remaining shrimp.
Place baking sheet in preheated oven. Bake until the shrimp are bright pink on the outside and the meat is no longer transparent in the center and the coconut is golden brown, about 15 to 20 minutes, flipping shrimp 1/2-way through.
