Ingredients

Tomato-Basil Topping

  • 1 1/2 cups fresh Plum Tomatoes seeds and jelly removed, diced 3/16 to 1/4-inch
  • 1 tablespoon fresh Basil finely chopped
  • 1 tablespoon Extra Virgin Olive Oil
  • 1/4 teaspoon Salt to taste

Garlic-Infused Olive Oil

  • 1 medium clove Garlic
  • 2 tablespoons Extra Virgin Olive Oil

Crostini

  • 2 Italian Flat Breads about 4 ounces each
  • 2 tablespoons freshly grated Parmesan Cheese

Instructions

Tomato-Basil Topping

  • Place ingredients thoroughly in a small bowl. Blend, gently, but well.
  • Place, covered, in the refrigerator, for 2 hours to chill before serving.
  • Just prior to serving, drain excess liquid.

Garlic-Infused Olive Oil

  • Peel and crush garlic clove. Place in another small bowl.
  • Add extra virgin olive oil.
  • Infuse (let soak) for one hour, before dribbling onto bread.

Crostini

  • Preheat oven to 400°F.
  • Line sheet pan or cookie sheet with foil.
  • Dribble garlic-infused olive oil over bread.
  • Sprinkle with Parmesan cheese.
  • Place in preheated oven and bake for 4 - 5 minutes until hot, but not crisped or dried.
  • Cut bread into six wedges or 2 x 2-inch squares.
  • Remove to serving plate. Top with chilled Tomato-Basil Topping.
  • Serve immediately.
