Preheat oven to 350°F.
Peel the apples, if you like. They are fine peeled or unpeeled.
Core the apples. Chop into small cubes. Apple chunks should be no smaller than 1 inch (or they will get too mushy when cooking).
Place apples into a large bowl.
Add brown sugar, lemon juice and 1 tablespoon cinnamon. Toss until apples are well-coated.
Pour apple mixture into an oven-safe 8 1/2 x 12-inch casserole dish.
In a small bowl, mix flour, sugar, baking powder, salt and 1 tablespoon cinnamon.
Add egg and about 1/2 of the butter.
Spread mixture evenly over top of apples.
Sprinkle remainder of the butter on top of the crisp.
Cover dish with foil.
Bake at 350°F for 30 minutes, or a bit more until deep golden brown and bubbling.
