A Noodles & Company Copycat Recipe
Noodles & Company Pesto Cavatappi Recipe
Ingredients
- 1 box Cavatappi Noodles or other large hearty Pasta, of choice
- 1 tablespoon Extra Virgin Olive Oil
- 1 clove Garlic minced fine
- 7 ounces Pesto store bought or homemade, of choice (Noodles & Company uses a brand available at Gordon's Foods Services - per a former employee)
- Salt and freshly ground Black Pepper to taste
- 1/2 pint Grape Tomatoes sliced in half lengthwise
- 1/2 pint Mushrooms sliced
- 1/3 cup White Wine
- 1/4 cup Heavy Cream
- Shredded Parmesan Cheese to serve
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- Add olive oil to a small sauté pan. Place over medium heat.
- When oil is hot and shimmering, add garlic. Sauté until tender. Remove garlic.
- In a small bowl, add pesto and roasted garlic. Mix well.
- Taste. Add salt and pepper, to taste, if needed. Set aside.
- Add tomatoes and mushrooms to hot pan. Sauté until mushrooms are tender.
- Add wine. Cook to reduce for 2 minutes.
- Add cream. Reduce for another 1 - 2 minutes.
- Add prepared pesto mixture. Stir to mix well.
- Add prepared pasta. Stir very well and heat though.
- Remove from heat and set aside for 1 - 2 minutes to allow the pasta to soak up the pesto.
- Place pasta on a serving dish or individual serving plates. Top with shredded Parmesan cheese.
- Serve hot.
