Johnny Carino’s Artichokes and Pasta
A Johnny Carino’s Copycat Recipe
Johnny Carino's Artichokes and Pasta Recipe
Ingredients
- 16 ounces Angel Hair or other thin Pasta
- 4 tablespoons Extra Virgin Olive Oil
- 2 cloves Garlic finely diced
- 1 cup diced Roma Tomatoes
- 1/2 cup finely diced Black Olives
- 1/4 cup Capers
- 8 ounces jarred Artichoke Hearts cut in 1/2 or 1/4
- 1/4 cup White Wine
- Parsley chopped fine, to garnish
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- Pour olive oil into a medium skillet. Place over medium heat.
- When oil is hot and shimmering, add garlic. Sauté until garlic becomes fragrant.
- Add tomatoes, olives, capers, artichokes and white wine. Sauté until wine is reduced, about 2 - 3 minutes.
- Place pasta into a serving dish or individual serving plates. Top with sauce.
- Sprinkle with parsley, to garish.
