How to Bake Boneless Chicken Breasts and Thighs

Baking chicken breasts and/or thighs is the easiest method for precooking your chicken.

  1. Preheat oven and heat to 425°F.
  2. Rub raw chicken breasts or thighs with a small bit of olive or vegetable oil. Season with salt and pepper, to taste.
  3. Place chicken in a single layer in a 9-inch baking dish or on a foil covered cooking sheet.
  4. Place chicken in preheated oven and back until internal temperature reaches 165°F on an instant read thermometer (see below), about 20 minutes.
  5. Remove baking dish or pan from the oven. Cover with aluminum foil and let chicken rest for 10 minutes.
  6. When cooled enough to handle, prepare chicken for the recipe you are preparing.

How to Cook Boneless Chicken Breasts and Thighs on the Grill

  1. Before grilling, clean your grill with a grill brush and oil the grate. Brush chicken with oil to fully coat.
  2. Build a charcoal fire or preheat gas grill on medium for 10 – 15 minutes. Prepare for direct cooking over medium heat at 425 – 450°F.
  3. Grill for about 9-10 minutes. Flip the chicken breasts at the halfway point.
  4. Check the internal temperature of the chicken using an instant read cooking thermometer (see below). When the internal temp reaches 165°F, remove from grill and use in your recipe.
