Great Harvest Bread Company Kale Salad Recipe
Ingredients
- 2 bunches different varieties/colors of Kale washed and dried and stems removed, cut into 1/2 inch strips
- 1/2 cup Golden Raisins
- 1 cup Candied Seeds and Nuts Recipe below
- 1/2 cup Great Harvest Bread Company Sherry Dijon Dressing Recipe below
- Salt and freshly ground Black Pepper to taste
Instructions
- Prepare Great Harvest Bread Company Sherry Dijon Dressing and Candied Seeds and Nuts according to recipes below.
- Place kale, raisins and candied seeds & nuts in a large mixing bowl.
- Toss to mix well.
- Pour Sherry Dijon Dressing over salad. Toss to mix well.
- Serve in large salad bowl, to allow guests to serve themselves or on individual plates.
- Serve with slices of crusty bread - from Great Harvest Bread Company, naturally. 😉

Great Harvest Bread Company Sherry Dijon Dressing Recipe
Ingredients
- 1 tablespoon Dijon Mustard
- 1 clove Garlic minced
- 1/3 cup Red Wine or Sherry Vinegar
- 2 teaspoons Honey
- 1 cup Olive Oil
- 2 teaspoons chopped fresh Thyme
- Salt and freshly ground Black Pepper to taste
Instructions
- In a small mixing bowl, combine mustard, vinegar and honey. Whisk to mix well.
- Slowly drizzle in olive oil while whisking to emulsify fully.
- Add thyme. Mix.
- Taste. Add salt and pepper, to taste.
- Store in a tightly sealed container, in the refrigerator, until ready to serve. Shake well before using.

Candied Seeds and Nuts Recipe
Ingredients
- 1/2 cup Pumpkin Seeds
- 1/2 cup Sunflower Seeds
- 1 cup Walnuts
- 1 tablespoon Canola Oil
- 1/4 teaspoon Cayenne
- 1/4 teaspoon Allspice
- 1/2 teaspoon freshly ground Black Pepper
- 1 teaspoon Salt
- 1 tablespoon Honey
Instructions
- Preheat the oven to Preheat oven to 350°F.
- In a small bowl combine all ingredients, except honey. Mix well.
- Spread out on a parchment or foil lined sheet tray
- Place in oven and roast for 10 to 15 minutes.
- Remove from heat and add honey. Using a rubber spatula, stir to completely coat.
- Return the tray to the oven and continue to roast until honey is evaporated, about five minutes more.
- Remove from the oven and let cool. Break apart with your hands as necessary.
