A Disney Copycat Recipe
Spoodles Restaurant is located at Disney’s Boardwalk Resort at Disney World in Orlando. Restaurant critic Scott Joseph says: “This Disney restaurant offers true Mediterranean cuisine, not just Italian. This is not for the steak-and-potatoes crowd, it’s for the adventurous diner. The tapas-oriented menu is perfect for sampling the authentic dishes of the Mediterranean countries. Order a tableful of small dishes and share them all — everything is wonderful.”
Hummus is a Middle Eastern dip made from cooked, mashed chickpeas blended with tahini, lemon juice and garlic. The standard garnishes in the Middle East includes olive oil, a few whole chickpeas, parsley and paprika. It is usually eaten as a dip, with pita bread but is great with crackers or chips.

Disney's Spoodles at the Boardwalk Resort Hummus Recipe
Ingredients
- 1 1/4 cups Garbanzo Beans drained and rinsed
- 1 tablespoon freshly squeezed Lemon Juice
- 1 tablespoon chopped Garlic
- 2 teaspoons Extra Virgin Olive Oil
- 2 teaspoons Tahini Paste
- 1/2 teaspoon Kosher Salt
- 1/8 teaspoon freshly cracked Black Pepper
- 1/8 teaspoon Cayenne Pepper
- 1/8 teaspoon toasted ground Cumin
- 1 teaspoon Extra Virgin Olive Oil to drizzle on top of finished dish before serving
- Paprika to sprinkle on top of finished dish before serving
Instructions
- Place all ingredients, except 1 teaspoon olive oil and paprika, into a food processor or blender. Purée until smooth.
- Taste. Add salt and pepper or other seasonings to taste, if desired.
- Served chilled. Just before serving, drizzle olive oil and sprinkle paprika lightly over top.
- Serve with pita breads, crackers and/or chips, for dipping.
