Cap’n Jack’s, was a dockside lounge and restaurant in Downtown Disney. It closed in 2013 to make room for additions to the Lake Buena Vista complex. Cap’n Jack’s Oyster Bar Clam Dip was a longtime favorite of visitors and is greatly missed by many. Now you can make it at home.
It’s great when served with chips, crackers, veggies… and a strawberry margarita. 😉

Disney’s Cap’n Jack’s Oyster Bar Clam Dip from 1989 is a Straight-From-the-Restaurant Recipe.
Disney's Cap'n Jack's Oyster Bar Clam Dip Recipe
Ingredients
- 1 cup chopped fresh Clams about 10, reserve clam juice
- 3 small Greek Pepperoncini Peppers
- 1 1/2 teaspoon Fish Bouillon
- 1 tablespoon chopped Chives
- 8 ounces Cream Cheese cut into pieces and softened to room temperature
- 1 teaspoon Seasoned Salt
- 3/4 cup Sour Cream
Instructions
- Drain clam liquid into a small skillet. Bring to a boil.
- Add chopped clams. Cook, just below boiling point, for 2 to 3 minutes. Drain.
- Place clams into a food processor with a steel blade.
- Cut stems off pepperoncini. Chop each pepper into several pieces. Put peppers into food processor.
- Add fish bouillon, cream cheese, chives and salt.
- Process until blended.
- Add sour cream and process just to blend.
- Serve chilled with assorted crackers and veggies.
