A Corner Bakery Cafe Copycat Recipe
Corner Bakery Cafe Bacon Tomato Mac and Cheese
Ingredients
- 12 ounces about 3 cups uncooked Elbow Macaroni
- 2 tablespoon Butter
- 1 tablespoon Olive Oil
- 1/4 cup All-Purpose Flour
- 1/2 teaspoon Salt
- 1/4 teaspoon ground Nutmeg
- 1/8 teaspoon ground Red Pepper
- 1 1/2 cups Milk
- 8 ounces American Cheese shredded
- 8 ounces Sharp Cheddar Cheese shredded
- 1 medium Tomato seeded, chopped (about 1 cup)
- 4 slices crisply cooked Bacon crumbled (about 1/3 cup) + more, to sprinkle on top
- 1/4 cup coarsely chopped Parsley + more, finely chopped, to sprinkle on top
Instructions
- Prepare pasta according to package directions. Drain. Set aside.
- Add butter and olive oil to a 3 quart saucepan. Place over medium heat and cook until sizzling.
- Stir in flour, salt, nutmeg and ground red pepper. Continue cooking, stirring constantly, until mixture is bubbly and very lightly browned, about 1 to 2 minutes.
- Add milk, 1/4 cup at a time, stirring constantly, until mixture is thickened, about 5 to 7 minutes.
- Add cheeses, a small bit at a time. Stir until melted and sauce is smooth before adding next bit. Continue until all cheese is added and melted.
- Add cooked macaroni, tomato, 1/3 cup crumbled bacon and parsley. Stir gently until well-mixed.
- Garnish with additional crumbled bacon and finely chopped parsley.
