Bravo! Italian Kitchen Braised Beef Ravioli Recipe
Ingredients
- 12 ounces Beef Ravioli store bought or homemade
- 4 tablespoons unsalted Butter
- 1 Roasted Sweet Potato (Recipe below)
- 14 Sage Leaves
- 4 ounces Chicken Stock
- 2 tablespoons White Wine Vinegar
- 2 ounces Heavy Cream
- 2 tablespoons unsalted Butter
- Salt and freshly ground Black Pepper to taste
- Grated Parmigiano-Reggiano for serving
- Fresh Parsley chopped, for garnish
Instructions
- Prepare Roasted Sweet Potato according to recipe below.
- Prepare pasta according to package directions. Drain. Set aside.
- In a large sauté pan, gently heat 4 tablespoons unsalted Butter until it melts and begins to brown slightly.
- Add roasted sweet potato cubes and sage. Heat through.
- Add chicken stock, vinegar and cream. Bring to a simmer and reduce to sauce consistency.
- Add 2 tablespoons unsalted Butter. Stir continuously until fully melted.
- Taste. Add salt and pepper, to taste.
- Add prepared ravioli to sauté pan. Cook 20 seconds.
- Spoon ravioli onto serving plates.
- Top with remaining sauce. Sprinkle with grated Parmigiano-Reggiano and parsley.
- Serve hot.

Ingredients
- 1 Sweet Potato diced into 1/2-inch cubes
- 1 tablespoon Extra Virgin Olive Oil
- Salt and freshly ground Black Pepper to taste
Instructions
- Preheat oven to 350°F.
- In a medium roasting dish or pan, add sweet potato cubes and olive oil. Mix well to coat.
- Add salt and pepper, to taste.
- Place in preheated oven. Bake 35 minutes or until slightly browning occurs.
